This one is for all of our gluten-free folks out there who love cookies and know when they've got their hands on something special!
These amazing cookies come FULL of all your favorites like rich dark chocolate chips, savory peanut butter, and sweet maple syrup, but without any of the gluten of traditional cookies thanks to our chickpeas!
Ingredients:
- 1 (15oz) can chickpeas, drained and rinsed
- ½ cup NO SUGAR ADDED peanut butter
- ⅓ cup Sugar-Free maple syrup
- 2 teaspoons vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ⅓ cup Sugar-Free chocolate chips
- Tom & Jenny’s caramels
Steps:
1.) Preheat the oven to 350°F and line a baking sheet with parchment paper.
2.)In a blender or food processor, blend the chickpeas and NSA peanut butter first, then add the Sugar-Free maple syrup and vanilla extract, blending 2-3 minutes until smooth.
3.) Add the baking powder, baking soda, and salt and blend for one more minute.
4.) Stir in the Sugar-Free chocolate chips.
5.) Scoop tablespoon-sized portions of dough onto the baking sheet.
6.) Gently press a Tom & Jenny’s caramel into the center of each cookie.
7.) Bake for 12-14 minutes, or until the edges are lightly golden.
8.) Let cool completely before enjoying!
