These quick, no-bake energy bites are the perfect snack for when you need something filling, simple, and delicious to help you get through the day!
All the delicious sweetness you could want from a midday snack, and they're mostly comprised of oats and peanut butter! So the great part is that you'll only need a few simple ingredients to get started! Here's what you'll need:
Ingredients:
- 1 cup old-fashioned oats
- 1/2 cup creamy peanut butter
- 1/2 cup semisweet chocolate chips
- 1/3 cup honey
- 1 tablespoon chia seeds
- A handful (4 - 6 pieces) of Tom & Jenny’s caramels
Note: The size of the bites can vary a bit, but we have found that if you err on the side of 1-inch or less, they tend to stay together better. This recipe should make you 5-7 energy bites.
Steps:
1.) Add the oats, chocolate chips, chia seeds, peanut butter, and honey into a large mixing bowl and mix until thoroughly combined. See image below.
2.) Cover the mixing bowl and place in the refrigerator until chilled. Roughly 1-2 hours.
3.) Once chilled, take out your bowl and begin to roll your mixture into ~1-inch balls.
4.) Melt about 4-6 Tom & Jenny’s caramels in the microwave and dip each ball into the melted caramel.
5.) ENJOY!!!!
Note: These can then be eaten at about room temperature, or you can stick them back into the fridge to be chilled again.
How to Store Leftovers:
Refrigerate in a sealed container for up to a week or freeze for up to 3 months.
