No-Bake Coffee Caramel Brownie Bites
These delicious no-bake brownie bites are gluten-free, sugar-free, and full of protein. Adapted from @healthfulradiance on Instagram.
Ingredients:
Bites
- 1 cup creamy peanut butter or almond butter
- 1/4 cup sugar-free maple syrup
- 1/2 cup sugar-free chocolate protein powder of choice (check to ensure gluten-free)
- 1/4 cup cacao powder
- 1 cup almond flour
- pinch of sea salt
Coating
- 1/2 cup sugar-free chocolate chips/chunks
- 2 tbsp coconut oil, melted
- 4 Tom & Jenny’s Coffee caramels, melted
Instructions:
1.) Combine the peanut butter and maple syrup in a mixing bowl until smooth and sticky.
2.) Add the protein powder, cacao powder, almond flour, and sea salt. Mix together until a uniform batter forms. Optional: add in sugar-free chocolate chips or chunks!
3.) Line a tupperware with parchment paper. Roll the batter out into bites and place in the tupperware to chill in the fridge while you melt the chocolate.

4.) Add the chocolate and coconut oil to a small, microwave-safe dish, and microwave in 30-second increments until melted.
5.) Remove the bites from the fridge, dunk each one in the melted chocolate, and transfer back to the plate to set in the fridge for 30 minutes.
6.) Once set, drizzle the bites with the melted Coffee caramel, transfer to an airtight container, and store in the fridge for a week or the freezer for one month. Enjoy!
