Single-Serving Peach Crisp

This cozy little crisp is made gluten-free and with no added sugar with simple swaps. It’s the same warm, bubbly comfort you crave in a fruit crisp, just with better-for-you ingredients (and a caramel twist you’ll definitely want to repeat).

Filling ingredients:

  • 1 ripe peach
  • ¼ tsp cinnamon
  • ½ tsp lemon juice

Crisp ingredients:

  • 2 tbsp rolled oats
  • 1 tbsp almond flour
  • 1 tbsp sugar-free maple syrup
  • 1 tbsp coconut oil, melted
  • Pinch of cinnamon + salt

Drizzle ingredients:

  • 4 Tom & Jenny’s caramels

Steps:

1.) Preheat oven to 350°F and coat an 8oz ramekin with favorite nonstick spray or baking oil.

2.) Prepare peaches: Slice the peach and toss with cinnamon, lemon juice, and a tiny pinch of salt. Place in ramekin.

3.) Make topping: In a small bowl, mix oats, flour, maple syrup, coconut oil, cinnamon, and salt.

4.) Assemble: Sprinkle topping evenly over peaches.

5.) Bake 18–20 minutes, until peaches are bubbly and topping is golden.

6.) Place the unwrapped Tom & Jenny's caramels in a small microwave-safe dish and heat in the microwave in 30 second bursts, stirring after each until caramels are melted and smooth.

7.) Drizzle Tom & Jenny's over the peach crisp and serve warm. Enjoy!
